Gruyere cheese has a mildly nutty flavor and creamy texture. Like many semi-firm cheeses, Gruyère has a milder, grassier flavor when young and a sharper character once aged. The flavor of young Gruyère cheese is reminiscent of the “forage” (grass) the cows eat.
